PRE-CLEANING - GRAIN STORAGE

The arrival of the wheat and the first selection are very important phases for the production of high-quality flour. We have an internal analysis laboratory that checks the incoming wheat and the outgoing flour to ensure food safety and the excellence of our product, in addition to certified external laboratories for specific controls throughout the processing.

DRY CLEANING - CONDITIONING

During this stage, impurities such as dust, straw, pebbles, and seeds of different cereals are extracted from the grains. The grains are then treated with water and left to rest in storage cells for a period ranging from 12 to 40 hours, depending on the hardness of the grain. The water treatment improves the milling process.

MILLING - SIFTING

Milling is the "flaking" of the grains: the outer layers are removed from the flakes to extract the starchy part.

Sifting classifies the product by size: flour, semolina, bran, bran flour, and middlings.

RIPENING - PACKAGING

After milling, the flour is left to rest to allow natural biological processes to do their work and deliver us a "balanced" flour, ready in all its aspects. In packaging, transportation, and delivery, you will find the same care that we put into every phase of the production process, with vehicles dedicated solely to flour transportation and suitable for preserving its integrity and flavor, as well as a staff trained to move and store the products in the best possible way.
